Hot Potato Sandwich
Preparation Time: 20 minutes

Ingredients
- 1 potato per person, washed and microwaved until firm yet tender Havarti (or any soft cheese)
sliced.
- 1 bunch English spinach.
- Washed Roasted red capsicum.
- Ripe avocado, peeled and sliced.
Method
- When cool enough to handle, carefully slice the potato length ways into three slices.
- Sandwich the cheese, spinach leaves, capsicum and avocado between the potato slices & reassemble
back into a potato shape.
- Bake in a 180°C oven for 20 minutes until the cheese has melted, or microwave for 3 minutes
on high and serve.
