Cheesy Mash with Sage
Easy to make with great fresh flavour!
Preheat oven to 190°C. Bake potatoes uncovered until
heated through and golden brown, about 45 minutes.
INGREDIENTS
1.5 kg potatoes, peeled & cut into 4 cm cubes
1/4 cup butter
2 1/2 tablespoons minced fresh sage
3/4 cup thicken cream
3/4 cup milk
2 1/4 packed cups (about 250 gm) coarsely grated cheddar cheese
METHOD
- Butter an 8-10 cup baking dish. Boil potato cubes in a large pot of
salted water until tender, about 12 minutes.
- Melt butter in a medium saucepan over medium-high heat. Add 2 tablespoons of sage, stir until butter begins to brown, about 3 minutes. Add cream and milk, bring to simmer.
- Drain potatoes & return to pot. Stir over medium heat until excess moisture evaporates. Add cream mix to potatoes & mash. Stir in 1 3/4 cups of cheese. Season potatoes with salt and pepper. Transfer to prepared dish. Sprinkle with 1/2 cup cheese and 1/2 tablespoon sage. (Can be made 2 days ahead. Cover with plastic & chill.)
