Red Onion Meat Loaf

Serves: 8

Ingredients

  • 2 tablespoons olive oil
  • 1 1/4 pounds red onions, chopped
  • 4 garlic cloves, crushed
  • 1 cup ketchup
  • 1/2 pound ground pork
  • 1/2 pound ground veal
  • 1/2 pound ground beef
  • 1 1/2 cups white breadcrumbs
  • 1 5.5oz can vegetable oil
  • 1/2 cup finely chopped parsley
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon ground black pepper

Method

  1. Preheat oven to 150'C.
  2. Heat oil in heavy large skillet over medium-high heat .
  3. Add onions and saute until just tender, about 6 mins.
  4. Add garlic; saute 1 minute.
  5. Transfer onion mixture to large bowl, add 1/2 ketchup and all remaining ingredients.
  6. Mix until blended.
  7. Shape mixture into 9x4 inch loaf on large baking sheet.
  8. Spread remaining ketchup over top and sides.
  9. Bake meat loaf until inserted thermometer registers 80'C. About 1 hour.
  10. Let stand 10 mins, transfer to platter and serve.
