Potato Nests

INGREDIENTS
1kg potatoes, peeled, cooked and mashed
1 tblspn milk
1 tblspn butter
1 egg
600g low-fat beef mince
1 medium onion, finely chopped
1 clove garlic, crushed
2 tblspn tomato paste
1 tspn fresh basil,chopped
1 x 400g can chopped tomatoes
100g button mushrooms, sliced
1 small zucchini, grated
Salt and pepper
METHOD
- Beat milk, butter and egg into the mashed potatoes and season with salt and pepper.
- Place the mixture into a piping bag and pipe “nests” on a greased or non-stick baking tray.
- Brown under the grill or in a hot oven (220 degrees) for approximately 10 minutes or until golden. Keep warm.
- In a large pan, fry the onion, garlic and mince until browned. Add all other ingredients and simmer for 20 minutes.
- Spoon the mixture into the nests and serve.

You can use any variety of potato for this recipe, however, the following potatoes tend to work better:
