4 x 100g cod fillets (or any other firm-fleshed white fish)
2 large leeks, washed and sliced
1 tablespoon butter
1 litre water

Rarebit mix:
2 potatoes, boiled and mashed
200g grated cheddar cheese
¼ cup milk
¼ cup fresh white breadcrumbs
¼ teaspoon English mustard

Salt and pepper to taste
1 egg yolk

  1. Place the butter, leeks and water into a large oven-proof dish, bring to the boil and then bake in a preheated 180°C oven for 20 minutes.
  2. Remove the dish from the oven, place the cod fillets on top of the leeks and bake for a further 20 minutes.
  3. Put the cheddar cheese into a pan, add the milk and cook on a low heat until the cheese has melted, being careful not to boil.
  4. Add the potatoes, breadcrumbs, mustard, Worcestershire sauce and season with salt and pepper.
