Baked Cod with Potato Rarebit

INGREDIENTS
4 x 100g cod fillets (or any other firm-fleshed white fish)
2 large leeks, washed and sliced
1 tablespoon butter
1 litre water
Rarebit mix:
2 potatoes, boiled and mashed
200g grated cheddar cheese
¼ cup milk
¼ cup fresh white breadcrumbs
¼ teaspoon English mustard
2 shakes Worcestershire sauce
Salt and pepper to taste
1 egg yolk
1 egg
METHOD
- Place the butter, leeks and water into a large oven-proof dish, bring to the boil and then bake in a preheated 180°C oven for 20 minutes.
- Remove the dish from the oven, place the cod fillets on top of the leeks and bake for a further 20 minutes.
- Put the cheddar cheese into a pan, add the milk and cook on a low heat until the cheese has melted, being careful not to boil.
- Add the potatoes, breadcrumbs, mustard, Worcestershire sauce and season with salt and pepper.
- When cool, add the egg and egg yolk and beat well. Remove the dish from the oven and spread the rarebit mix evenly on top then bake for a further 10 minutes or until the rarebit is golden brown.
RECOMMENDED VARIETIES
You can use any variety of potato for this recipe, however, the following potatoes tend to work better:

- Coliban
- Nadine
- Royal Blue
- Kestrel
