Stuffed Spuds
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4 - 8
Ingredients
- 4 large potatoes, microwave until cooked
- 100g fresh mushrooms, sliced thinly
- tomato, sliced
- 2 teaspoons dried herbs
- green capsicum, chopped
- tablespoons plain low-fat yogurt
Method
- Cut the potatoes in half and scoop out the flesh.
- Combine potato flesh, mushrooms, herbs, capsicum and yogurt in a bowl and mix well.
- Place back into the potato skins, top with a slice of tomato.
- Reheat in the microwave for 6 minutes.
