Stuffed Spuds

Cooking Time: 20 minutes
Serves: 4 - 8

Ingredients

  • 4 large potatoes, microwave until cooked
  • 100g fresh mushrooms, sliced thinly
  • tomato, sliced
  • 2 teaspoons dried herbs
  • green capsicum, chopped
  • tablespoons plain low-fat yogurt

Method

  1. Cut the potatoes in half and scoop out the flesh.
  2. Combine potato flesh, mushrooms, herbs, capsicum and yogurt in a bowl and mix well.
  3. Place back into the potato skins, top with a slice of tomato.
  4. Reheat in the microwave for 6 minutes.
