Tuna and Red Onion Spiedini

Serves: 2

Ingredients

  • 6 tablespoons garlic flavoured olive oil
  • 2 tablespoons lemon juice
  • 4 teaspoons chopped rosemary
  • 1 12oz tuna steak, cut into 1 inch pieces
  • 12 1x1x1/4 inch red onion pieces
  • 8 lemon slices, halved
  • 4 cups mixed baby greens

Method

  1. Prepare barbeque (medium-high heat).
  2. Whisk oil, lemon juice and rosemary in small bowl to blend.
  3. Season dressing with salt and pepper.
  4. Thread tuna, onion and lemon slices onto 4 metal skewers.
  5. Brush wth dressing; sprinkle with salt and pepper.
  6. Grill tuna and onion until tuna is just opaque in center and onion is slightly charred and tender, turning and brushing often. About 8 mins.
  7. Toss greens and all remaining dressing in medium bowl.
  8. Mound salad on plates, top with skewers.
